New York City feels different in October, especially near Columbus Circle (new sign alert!). Over the past few months, we’ve made exciting progress and are counting down to the grand opening of our sixth location. As we get closer, we’re thrilled to introduce the leaders who will set the tone and bring this new Grey Dog to life.
Shannon
Meet Shannon Pierre! Shannon began as a server at Flatiron and later grew into the role of General Manager at Union Square. For the past year and a half, he has been leading the Flatiron team. Over his three years with The Grey Dog, Shannon has demonstrated our mission by cultivating a welcoming community.
He is now looking forward to being a part of a new beginning for The Grey Dog as the General Manager for the new Columbus Circle location! Shannon shared: “What excites me most is the opportunity to build something new from the ground up — a new team, new menu, new steps of service. It’s an opportunity to learn more about the industry.”
In the weeks ahead, Shannon will be preparing for opening day and setting the tone for The Grey Dog’s newest home. We couldn’t be more excited to see him lead the way.
Christian
Meet Christian Zubidi! He’s been part of The Grey Dog pack for 3.5 years and has just about done it all. From running the kitchen at Flatiron, working alongside Chef Edwin as Culinary Manager, leading the Carmine team as General Manager, and now… he’s heading to Columbus Circle as Kitchen Manager.
With all that experience under his belt, we couldn’t be more excited for Christian to take the reins at our newest location and roll out our brand-new dinner menu.When asked about the new menu, Christian shared: “I honestly love the new menu—it shows that The Grey Dog is more than just coffee and brunch. Since our move to full service after COVID, people still come in thinking it’s only a coffee shop. I hope this new spot proves we’re ready for dinner service.”
Christian will be spending the next few weeks preparing the kitchen and learning Chef Edwin's new menu, his personal favorite? The mushroom linguine. We can’t wait for you to try it!
